Let the cookies cool down on the pan completelyġ. The top should be kinda pale in color and the bottom is just lightly golden brown. Carefully add the bowl of dry ingredients to the mixing bowl. Scrape down the sides and bottom of the bowl with a spatula. Mix on medium-low speed (setting 4) for 20 seconds. Make the Dough Add the egg and almond extract to the bowl.
